BENIHANA SALAD DRESSING
(copycat recipe)
1/4 cup chopped onion
1/4 cup peanut oil
2 Tbsp rice wine vinegar
2 Tbsp water
1 Tbsp chopped fresh ginger root
1 Tbsp chopped celery
1 Tbsp soy sauce
1 1/2 tsp tomato paste
1 1/2 tsp sugar
1 tsp lemon juice
dash each salt and pepper
Combine all ingredients in blender or food processor (fitted with steel knife). Process until almost smooth.
Store unused portion in a covered container in the refrigerator.
Makes about 1 cup
