Recipe: Wild Zucchini Rice Salad (using wild rice and brown rice)

WILD ZUCCHINI RICE SALAD

"This makes a great main dish for two or a side dish for four."

1/4 cup uncooked wild rice
1/4 cup uncooked brown rice
FOR THE SALAD:
1 or 2 small zucchini, grated
1 tomato, cut in wedges or chunks
1 red bell pepper, cut in strips (or yellow or purple bell pepper)
1/2 bunch fresh spinach or less, torn small
1 avocado, cut in chunks
Salad dressing (of your choice)

TO COOK THE RICE:
Soak the wild rice in 1/2 cup water for 2-4 hours. Then cook it in 1/2 cup water for 15-20 minutes. Then add the brown rice and cook together for 45-60 minutes longer (add extra water if necessary.) The combined rice will make 1 cup cooked. Cool or chill.

TO MAKE THE SALAD:
Mix the rice and all the ingredients together and toss with a favorite dressing.

Makes 2-4 servings
