French Macaroons

1 cup almond paste
2/3 cup white sugar
1/4 cup powdered sugar
2 tablespoons flour
1/2 teaspoon almond flavoring
1 egg white

Chop almond paste into pieces. Mix with remaining ingredients. Add enough egg white to make a stiff mixture. Drop on greased foil lined cookie sheet. Bake at 325 for 15m minutes or until light brown. let stand 2 minutes, then cool on rack. ( don't see why one couldn't add cocnut to this)

Old Fashioned Macaroons

3 egg whites
3/4 cup sugar
1 cup coconut
1/2 teaspoon vanilla flavoring
1/2 teaspoons almond flavoring

Combine ingredients in saucepan and cook over low heat, stirring, until mixture is thich (ditach will hold when knife is pulled through mixture) aboaut 10 minutes. Drop by half teaspoons on greased cookie sheet. let stand 12 minutes. Bake at 300 degrees for 20 minutes or until light brown. Store in tight container.

Even though the one above has egg whites in it, I think by cooking first, it would make them more dense.
