Recipe: Fresh Lemon Zest Chile-Herb Rub

Fresh Lemon Zest Chile-Herb Rub
1/4c salt
1/4c sugar
2 Tbl. each, pure ground hot amd mild New Mex. chiles
1 tsp cumin
1 tsp groun Mex. oregano
1 tsp ground corinder
1 tsp dry mustard
1 tbl minced lemon zest
mix all ingred. together, then spoon lightly onto ribs or poultry, rubbing it into the surface with your fingers, Freeze any left overs. Enough for 8 to 12 lbs. meat


Mex. Oregano & Garlic Rub
1/4 c sugar
1/4c ground pure New Mex. mild chile
1 tbl. ground Mex. oregano
1-1/2 tsp dried thyme
1tsp minced lemon zest
1tbl salt
9 cloves garlic, finely minced
1tbl dried minced onion
2tsp ground ginger
Mix together, spoon lightly on poultry or any other meat or fish. Rub in with fingers. Freeze any leftovers. Enough for 8 to 12 lbs of meat or seafood.
