Recipe: Chocolate Zucchini Squares (food processor)

CHOCOLATE ZUCCHINI SQUARES

"These don't get hard like some brownies do."

2 1/2 cups sifted flour
1/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup margarine, at room temperature
1 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup canola oil
1/2 cup buttermilk
1 teaspoon vanilla
3 eggs
2 cups shredded zucchini
1 cup semisweet chocolate pieces

Sift flour, cocoa powder, baking soda, allspice, cinnamon and salt together; set aside.

In food processor combine margarine, both sugars and oil until fluffy. Add buttermilk, vanilla and eggs and blend. Add dry ingredients until blended.

Stir in zucchini. Spread batter in 13x9x2-inch greased pan. Sprinkle with chocolate pieces.

Bake in preheated 325 degree F oven 45 minutes or until toothpick comes out clean. Cool completely in pan.

Cut into 24 squares.
