Recipe: Friendship Cake

Misc.

Someone posted this on one of these boards a LONG time back, so I can't remember who it was to give the credit to.

Starter:
1 (16oz) can fruit cocktail
1 (16oz) can peaches
2 1/2 c. sugar
1 (20oz) can pineapple tidbits
2 1/2 c. sugar
1 (8oz) jar marachino cherries
2 1/2 c. sugar

Combine fruit cocktail with juice and peaches with juice and 2 1/2 c. sugar in a large glass jar (Suntea jar). Stir with wooden spoon til sugar dissolves. Cover and let stand room temp. Stir each day for 10 days. Add pineapple with juice and 2 1/2 c. sugar. Mix well. Stir each day for another 10 days. Add cherries and juice and the last 2 1/2 c. sugar. Mix well. May store in fridge indefinitely. Yields 7 cakes worth or starter.

Cake Recipe:
1 (2 layer) white cake mix
1 1/2 c. starter
2/3 c. oil
4 eggs
1 c. chopped pecans

Combine cake mix with starter, oil, eggs. Stir in pecans and pour into greased and floured bundt pan. Bake at 325 degrees for 1 hour. Cool 5 minutes and invert onto plate.

(when mixing can, use plastic or wooden bowls and spoons)
