FROSTED CARROT COOKIES
1/2 cup Crisco vegetable shortening
1/2 cup butter (no substitutions)
3/4 cup sugar
2 eggs
1 1/4 cups cooked, mashed carrots
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup shredded coconut
1/4 cup chopped nuts (or more if desired)
Frosting (recipe follows)
Preheat oven to 400 degrees F. Grease cookie sheets.
Cream shortening, butter and sugar. Beat in eggs and carrots.
Sift together flour, baking powder and salt. Add to creamed mixture. Stir in coconut and nuts. Drop by teaspoonfuls on greased cookie sheets.
Bake for 10-12 minutes.
Drizzle with frosting while cookies are warm.
FROSTING:
2 1/2 teaspoons butter
1 1/2 cups powdered sugar
1 1/2 Tablespoons orange or lemon juice
2 teaspoons grated zest of 1 orange or lemon
Mix all ingredients well. Drizzle over warm cookies.
