FROSTED LIME SALAD
FOR THE SALAD:
2 pkgs. (3 oz each) lime Jello
1 cup boiling water
1 (20 oz) can crushed pineapple, drained
1/2 cup cherries, chopped
1/2 cup walnuts, chopped
1 (8 oz) carton small curd cottage cheese
1/2 cup chopped celery or carrot
FOR THE FROSTING (OPTIONAL):
1 (8 oz) pkg. cream cheese, room temperature
2 tbsp. mayonnaise
1 tbsp. lemon juice
FOR THE SALAD:
Dissolve Jello in 1 cup boiling water. Stir in the remaining ingredients. Mix well and pour into any kind of pan, loaf, 8x8-inch dish or mold. Chill until set.
TO MAKE THE FROSTING:
Mix all ingredients for the frosting together until smooth. Frost chilled salad.
