Recipe: Oven Fried Pork Loin (with breading)

OVEN-FRY PORK SEASONED COATING MIX

Ingredients: wheat flour, salt, partially hydrogenated vegetable oils (soybean and cottonseed), sugar, contains less than 2% of dextrose, defatted soy grits, monosodium glutamate, paprika, onion powder, spices, hydrolyzed soy protein, yeast, calcium propionate (preservative), garlic powder, caramel color, natural flavor, citric acid, tbhq (preservative).

Enriched Wheat Flour (Wheat Flour, Niacin, Iron, Thiamin Mononitrate [Vitamin B1], Riboflavin [Vitamin B2], Folic Acid), Salt, Partially Hydrogenated Soybean and Cottonseed Oil, Contains Less than 2% of Dextrose, Paprika, Monosodium Glutamate, Yeast, Natural Flavor, Caramel Color, Spice.

I did not find a copycat recipe. Hopefully you can adapt the following recipe. Good luck! Please share your results with us.

OVEN FRIED PORK LOIN

"Breading and baking the pork chops makes the meat very moist and tender. You can find cornflake crumbs with the breadings and not in the cereal section."

1/4 cup cornflake crumbs
1/4 teaspoon dried thyme
1/4 teaspoon dried sage
1/8 teaspoon salt (optional)
1/8 teaspoon ground black pepper
1 pound boneless top loin pork chops (about 3/4-inch to 1-inch thick), well trimmed

Preheat oven to 350 degrees. Spray an 8-inch by 8-inch baking dish with non-stick cooking spray.

Mix the first five ingredients in a plastic bag. Place a couple pieces of pork in the plastic bag and shake to coat evenly.

Arrange pork in the baking pan so that they are not touching.

Bake for 20-25 minutes or until pork is cooked.

VARIATION:

ITALIAN OVEN FRIED PORK:
Substitute 1/2 teaspoon of Italian seasoning for the sage and thyme.
