GARLIC-GINGER CHICKEN BREASts
2 tablespoons fresh lemon juice
2 teaspoons minced garlic
2 teaspoons minced fresh ginger root
2 teaspoons olive oil
1 teaspoon ground cumin
4 boneless skinless chicken breasts (1 pound total)
Freshly ground pepper
Hot cooked rice (for serving)
Stir-fried Chinese greens (for serving)
Make a marinade in a shallow dish by whisking together the lemon juice, garlic, ginger, oil and cumin. Add chicken, turning to coat it in the marinade. Let stand at room temperature for 10 minutes or cover and refrigerate for up to four hours.
Barbecue method: Remove chicken from marinade and discard marinade. In a barbecue preheated to medium, cook chicken, turning once, for three to five minutes per side, or until chicken is no longer pink inside.
Broiler method: Place chicken in a lightly greased 9-inch square baking pan and pour marinade over chicken. Broil in preheated broiler, turning once, for five to six minutes per side or until chicken is no longer pink inside. With either method, be sure chicken reaches an internal temperature of 170 degrees F on an instant-read thermometer.
Season to taste with pepper and serve. Serve with rice and stir-fried Chinese greens.
