Recipe: Garlic Oven Fries

GARLIC OVEN FRIES

Get the flavor of french-fried potatoes without all the fat by using just a bit of oil to coat the potatoes, then roasting them at a high temperature. Your kids will give these fries the thumbs-up.

4 medium red potatoes (2 1/2 to 3 inch), each cut in 8 wedges
2 teaspoons olive or canola oil
1 teaspoon dried basil leaves
1 teaspoon garlic salt

Heat oven to 500 degrees F. Lightly spray a 15- by 10- by 1-inch pan with cooking spray.

In medium bowl, toss potatoes with oil to coat. Sprinkle with basil and garlic salt.

Bake uncovered 15 to 18 minutes, stirring once, until potatoes are tender but crisp on outside.

Serves 4 (8 fries each)
Nutrition per serving: 130 calories, 2.5 g fat, 0 mg cholesterol, 250 mg sodium, 26 g carbohydrates, 2 g protein.
