Recipe: Gingerbread Bars (using granola and raisins)

GINGERBREAD BARS

1/2 cup sugar
1/2 cup oil
1/2 cup molasses
1 egg
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 cup boiling water
1/2 cup granola
1/2 cup raisins
Powdered sugar (optional, for sprinkling on top)

Heat oven to 350 degrees F. Grease a 13-by-9 inch pan.

In a large bowl, beat sugar, oil and molasses until well blended. Add egg; blend well.

Add flour, baking soda, cinnamon, salt, nutmeg and cloves; mix well. Add boiling water; blend well. Stir in granola and raisins. Spread in greased pan.

Bake at 350 degrees F for 20 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely.

Sprinkle with powdered sugar, if desired. Cut into bars.

Makes 36 bars.
