Recipe(tried): GFS - Gordon Food Services
Misc.Hi - it stands for Gordon Food Services. Coming from your direction, you would go over the 41 overpass, past the Toyota dealership, past Metro Parkway, and it would be on your left about a mile or two from 41. Big white and red building with GFS sign.
Pierogis are Polish, but every culture seems to have a version of it - Italians have their ravioli, etc. Traditionally, the Polish fillings are potato, potato and cheese, potato and onion, kapusta (which is cooked cabbage) or sauerkraut. And although I've never had or made them, I've heard of a dessert variety with blueberry filling.
When you get them frozen, you boil them for 4-6 minutes. Remove them when they float to the top, then drain them. We like them fried lightly golden brown, topped with golden brown onions and sour cream. YUMMY! Yesterday when I was working on them making the big quantities, I poured about a cup or two of vegetable oil in a deep pan, and sliced up 10 large onions and just let them simmer for about an hour until very translucent, then turned the heat to high for them to turn more golden brown. Just do the same thing with smaller quantity of oil and onions for home use.
The oil is infused with the onion flavor, and you use a small amount of that oil to fry them in, then top them with the onions and a dollop of sour cream, salt and pepper.
They're good as a side dish in place of rice or potatoes or pasta. And now that I've discovered them so delicious, I'll keep a bag in the freezer and use a few every so often for dinner. I usually do up a large batch of the oil/onion mixture and store it in the refrigerator so I don't have to make the onions every time. They last forever that way.
I was pleasantly surprised last night at the potluck dinner when many people recognized them and were ooohing and aahing over having pierogis again. And everyone said they were like they remembered from their childhood. Polish comfort food, for sure!
