GLAZED PEACH PIE
Un-equalled summer pie! Has the wonderful flavor of fresh peaches.
One 9-inch baked pie shell
3 1/2 cups peeled, sliced, fresh ripe peaches (approximately)
FOR THE GLAZE:
1 cup sugar
1/4 cup cornstarch
cinnamon and nutmeg (fresh ground if possible), to taste
Dash of salt
2 1/2 cups pureed, peeled, fresh peaches
1/2 cup fresh orange juice
1 tbsp fresh lemon juice
Whipped cream (for serving)
To make the glaze, In a small saucepan, combine sugar, cornstarch, salt, cinnamon, nutmeg and salt. Stir in pureed peaches, orange juice and lemon juice.
Cook on medium heat until thickened (about 5 minutes).
Pour half of the glaze mixture into the baked pie shell. Top with sliced peaches and brush with remaining half of the glaze. Refrigerate at least 3 hours.
Top with whipped cream when served.
