Recipe: Light Wheat Pita Bread (bread machine dough cycle)

LIGHT WHEAT PITA BREAD

1 cup water
3 tablespoons oil
2 cups bread flour
1 cup whole wheat flour*
1 tablespoon sugar
1 teaspoon salt
2 teaspoons bread machine yeast

Place all ingredients in your machines fully assembled pan in the order recommended by your machines manufacturer. Place the pan in your machine. Select the dough cycle and press start, when the machine beeps remove the dough and punch down to release the gas, and divide into eight equal pieces. Form into balls, cover and let rest for 15 minutes.

Flatten the balls by hand or rolling pin into 5 to 6 inch rounds. Place on a floured surface or cornmeal-covered surface. Cover, and allow to rise 30 minutes.

Bake in a preheated 500 degree F oven for 8 to 9 minutes. Cool completely before storing.

*If you don't want wheat pitas use white bread flour for the 1 cup of whole wheat flour called for.
