Gorgonzola Dip

When we had dinner in Boston's Little Italy we had Gorgonzola cheese after dinner. That cheese is delicious. The people who ran the restaurant gave us a little bit of cheese and some bread to take back to our hotel for a snack. It didn't last very long, not even until midnight. We received a recipe from the restaurant for a Gorgonzola dip that is very good and is a nice way to end a fancy dinner, or even very good for a light snack or to start dinner.

Gorgonzola dip

4 oz Gorgonzola
1 3 oz package cream cheese
1/3 cup Cognac (or 1/3 cup cream)

Mash the Gorgonzola, and then put in the cream cheese and mix until the cheese mixture is smooth. Pour in the Cognac and mix again. Use as a dip for sliced apples, pears, or crackers.
