Recipe: Grandma's Spice Cookies, Low Sugar No-Bake Cookies (using corn flakes) for Anna
Desserts - Cookies, Brownies, Bars GRANDMA'S SPICE COOKIES
Makes 4 to 5 dozen cookies
1 package (18.5 ounces) spice cake mix
1 cup (2 sticks) butter, softened
2 eggs
1 cup sweetened flaked coconut
1 cup chopped walnuts
1 cup crushed cornflakes (see Note)
1 cup rolled oats
1 cup raisins
2 tablespoons sugar
Preheat the oven to 350 degrees. In a large bowl, combine the cake mix, butter, and eggs; mix well. Add the coconut, walnuts, cornflakes, rolled oats, and raisins; mix well. Drop the dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets; flatten with a glass that is repeatedly dipped in the sugar. Bake for 8 to 12 minutes, or until set. Cool for 1 minute, then remove from the baking sheets and let cool completely.
NOTE: How to crush the cornflakes? Place them in a plastic storage bag, seal, and crush with rolling pin.
LOW SUGAR NO-BAKE COOKIE
1/4 c. peanut butter
2 tbsp. sugar or substitute
2 tbsp. water
3/4 c. lightly crushed dry- cornflakes
1/4 c. dry milk
1/2 tsp. vanilla
1/4 c. raisins or nuts
Place peanut butter, dry milk, and sweetener-sugar in a bowl. Add vanilla and water; blend well. Stir in cereal and raisins-nuts. Shape into about 12 balls. To store cookies, place in a covered container and refrigerate. Recipe can be doubled or tripled.
