Recipe: Grape Nuts

Here is a recipe from my "Cooking from Quilt Country" book. I have never tried this one, but everything I have tried as yet in this book has been fabulous.

Homeade Graham Nuts
(A bit sweeter than the Grape Nuts in the store)

3 1/2 cups graham(whole wheat) flour
1 cup brown sugar
1 tsp salt
1 tsp baking soda
1 tsp ground cinnamon
2 cups buttermilk
2 tsp vanilla extract

Preheat oven to 350. In a large bowl, combine flour, brown sugar, salt, baking soda and cinnamon. Add buttermilk and vanilla and mix well. Pour into an oiled 12x16-inch flat baking pan and spread evenly with a spatula. Bake for 20-25 minutes or until the batter is firm, med. brown in color and shrinks slightly from sides of pan. With a metal spatula, completely loosen hot pattie from pan. Allow to cool on rack several hours or overnight.
Preheat oven to 275. Break pattie into chunks and put through a meat grinder, using a coarse blade, or pulse in food processor until coarse crumbs are formed. Divide crumbs between two 12x16-inch pans. Bake for 30 min., stirring every 10 minutes. Let cool, then store in an airtight container. Serve as cold cereal.
Makes 8 cups.
