GRILLED PARMESAN BASIL FLATBREADS
1 1/2 cups warm water
1/2 teaspoon granulated dry yeast
1/4 cup chopped fresh basil
1/4 cup imported Parmesan cheese, grated
2 tablespoons extra-virgin olive oil
1 teaspoon fine sea salt
1 teaspoon finely ground pepper
3 3/4 cups all-purpose flour
More grated Parmesan cheese (for topping finished breads)
In a large bowl, stir dry yeast in warm water. Allow mixture to sit for 5 minutes.
Stir in basil, parmesan, olive oil, salt and pepper into the yeast mixture. Add flour 1 cup at a time. Knead dough until smooth on a lightly floured board. Allow dough to proof in a warm area in a lightly oiled bowl until it has doubled in sized.
Place dough carefully on a floured board and punch down gently. Allow to rest 30 minutes.
Heat gas grill on medium setting.
Divide dough into balls and roll until 1/4-inch thick.
Brush one side lightly with olive oil. Place on grill and cook until crust is brown, about 3 to 4 minutes.
Lightly oil other side and flip over. Grill until crust is brown, about 3 to 4 minutes.
Sprinkle warm bread with Parmesan cheese and cool on racks.
