Recipe: Halloween School Lunch Recipes (8)

Holidays, Celebrations
Hi Lynn:-) I did a search on the internet. The following are ideas I found that I thought might work for you. Unfortunately none of the recipes are for 200 so you will need to do some math to get the amounts you need. I hope one of these will help.

HALLOWEEN MUMMY DOGS
Recipe provided courtesy National Hot Dog And Sausage Council.
Makes 6 servings

2 tubes refrigerator pizza dough rolls
1 cup grated part-skim mozzarella cheese
1/4 cup Freshly grated Parmesan (part-skim) cheese
Non-stick spray
4 tablespoons pizza sauce or pasta sauce
8 hot dogs
Optional pizza toppings: onions, green peppers, olives, etc.
1 tablespoon Italian herb seasoning mix (or your own mix of oregano, thyme, parsley, etc.)

Preheat oven to 300 degrees F. Spray cookie sheet with non-stick spray.

Open package of pizza dough, gather ingredients, grate cheese, and dice vegetables.

Place pizza dough on prepared cookie sheet and cut into 8 squares; press dough thin with fingers.

Add pizza sauce to each square. Add hot dogs and other pizza toppings and pizza herbs to taste.

"Mummify" the hot dogs by wrapping them completely in the dough and pinching the ends.

Bake for approximately 15 minutes or until crust begins to brown.

Serve with warm pizza sauce for dip

MONSTER TOES
Servings: 8-10
These are sooo cute for a Halloween Snack for kids. It came from Family Fun.

1 lb cocktail franks
6 to 8 flour tortillas
ketchup or mustard
toothpicks

Heat the oven to 350 degrees.

Cut a wedge into the end of each cocktail wiener to make a flat toenail.

Cut the tortillas into strips about 4 inches long and 1/2 inch wide. Discard the ends. Soften the strips in the microwave between damp paper towels for 10 to 30 seconds.

Roll each wiener in a tortilla strip around one end and secure with a toothpick. Place on a cookie sheet.

Bake for 7 to 8 minutes. Remove them from the oven, then fill the toenail with ketchup or mustard.

Remove the toothpicks before serving.

PIZZA WITCHES
Servings: 4-6

These were another old school lunch room recipe that is also no longer made. We got the recipe and really enjoy these.

1 1/2 lbs ground beef
1 medium onion, chopped
1/2 can ripe olives
1 can tomato soup
1 teaspoon garlic salt or garlic powder
1/2 teaspoon oregano
1 teaspoon sweet basil
salt & pepper
2 (12 ounce each) packages shredded pizza cheese
hoagie rolls

Brown hamburger and onion, drain well.

Add other ingredients except cheese.

Cut buns in half and butter them. Put ground beef mixture on each and then cheese on each.

Bake on cookie sheet for awhile and then broil under broiler until cheese bubbles.

These can be frozen (before baking) and taken out when needed to bake and broil.

WORMS AU GRATIN

Worms:
6-7 oz egg noodles, cooked with 8 oz spaghetti, broken into short pieces

Toss with:
2 Tbsp butter or margarine
1 1/2 cups grated cheddar cheese
Place in greased casserole.

Dirt:
2 slices whole wheat bread, toasted, crumbled into tiny crumbs
1 Tbsp butter or margarine, melted
1/4 tsp salt
Mix dirt ingredients together, sprinkle over worms.

Place under broiler for 5 minutes.

(CHICKEN) WITCH FINGERS

1 Tbsp vegetable oil
4 boneless chicken breasts
1 cup flour
1 egg, beaten
1 cup bread crumbs
Pitted black olives, halved lengthwise
Shredded lettuce

Grease cookie sheet with oil, set aside.

Carefully cut chicken breasts part way to create five "fingers" (the uncut part will be the palm of the hand). Slice them a little crooked for effect. Dust in flour, dip in egg, coat in bread crumbs.

Broil 5 minutes on each side until golden and cooked through.

Trim the tips with the olive fingernails and serve on lettuce.

SPOOKY SAMMIES

sandwich fillings
cream cheese
black olives

Create sandwiches filled with tuna salad, chicken salad, or turkey/lettuce/tomato/cream cheese. Cut filled sandwiches into ghost shapes and spread tops with soft cream cheese. Add black olive pieces for eyes and mouth. (To create shapes, first slice off crusts. Then trim off 2 upper corners, forming an arch as you cut. And carve a wavy line along bottom portion.)

BARBECUED BAT WINGS
Servings: 8

4 pounds chicken wings
2 cups ketchup
1 1/2 cups molasses
1/3 cup apple cider vinegar
3 tablespoons Worcestershire sauce
2 tablespoons sugar
Hot sauce to taste
Salt
Black pepper
Black paste food coloring
Blue paste food coloring
Green paste food coloring

Preheat the oven to 350 degrees.

Boil the chicken wings for twenty minutes in a large pot.

While the wings are cooking, prepare the sauce. Whisk together the ketchup, molasses, vinegar, Worcestershire sauce, sugar, hot sauce, salt, and pepper until smooth in a large roasting pan. Add enough black, blue, and green food colorings to the sauce to make a dark black sauce.

Place the pan in the oven and bake for 10 minutes, stirring once.

Drain the wings well and add them to the sauce and toss to coat evenly, poking the wings liberally with a fork.

Bake for 20 minutes, then increase the temperature to 450 degrees. Toss the wings in the sauce again to coat evenly. Bake until the sauce is thickened and slightly blackened, flipping the wings over occasionally, about another 15 minutes. Serve hot or at room temperature.

WORMS ON A BUN

Hot dogs
Hamburger rolls
Ketchup

Cut the hot dogs into thin slices and score the edges (about three cuts per slice).

Boil or microwave until the slices curl like wiggly worms. Serve three or four worms to a bun.
