Recipe(tried): Hamburger-Tortilla Skillet/Swedish Meatballs

Main Dishes - Pork, Ham

Hi Dana, Here are some recipes that you should
be able to prepare in an electric skillet.
Hamburger-Tortilla Skillet:
1 pound ground beef
1-10 ounce can enchilade sauce
6 corn tortillas
salt and pepper to taste
1 cup grated cheese (cheddar or co-jack)
Brown beef, drain. Add salt, pepper, and
enchilada sauce. Simmer awhile, add tortillas,
cover and let sit for 5 minutes. Sprinkle
with grated cheese, cover till cheese melts.
Serve. Note: This can easily be doubled or
tripled. You will probably want to use
the mild enchilada sauce (hubby's ulcer!).

Swedish Meatballs:
1 pound ground beef
1/2 an onion, finely chopped (I have picky
kids too so I just grate a little onion and
throw it in for flavor, the kids don't know
it's there!)
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. allspice
pinch each of nutmeg and cloves
1 egg
1 clove garlic, pressed or finely minced
3 to 4 slices bread
about 1/4 of a cup of milk
Dip the bread into the milk (may need more
milk depending on how much bread you use)
crumble up into the milk. Stir with a spoon
until pastey. Add meat, onion and seasoning,
the egg, and the garlic. Mix and form into
meatballs. Shake meatballs in a paper sack
with a little flour. Brown in oil in a
skillet. Remove from pan and set aside.
Drain most of the fat from skillet (leave
a tablespoon or two), add 2 Tbs. flour,
gradually add about 1 cup of water, stir
until thickened. Put meatballs back in
and cover and simmer for at least 20 min.
Serve with rice or noodles. Again, this
can also be doubled or tripled.
Another easy and inexpensive dish you could
do in a skillet is potato pancakes. The way
I got my son to eat these when he was little
(and SUPER picky) was to tell him they were
like flat french fries! He would put catsup
on them and thought they were great. I
usually serve these with homemade applesauce
and little brown and serve sausages. Hope
these ideas help. :)
