CROCKPOT BARBECUED TURKEY AND VEGETABLES

"Who would guess that 5 ingredients could be so tasty. A good quality barbecue sauce is the secret."

1 cup barbecue sauce
1/2 cup hot water
2 skinless turkey thighs, cut in half, about 2 pounds
3 medium potatoes, unpeeled, cut in 8 pieces each
6 medium carrots, in 2 1/2 x 1/2-inch sticks

In medium bowl, blend barbecue sauce with 1/2 cup hot water.

Layer turkey, potatoes and carrots in electric crockpot. Pour sauce mixture over top. Cover crock pot and cook on LOW setting at least 9 hours.

Remove turkey and vegetables with slotted spoon. Place on serving platter. Serve cooking juice over turkey and vegetables. (Cooking juices can be thickened with flour. Add small amount of hot liquid to 2-3 Tbsp flour in measuring cup. Stir and add back to crockpot, on High. Cook to thicken.)

AU GRATIN POTATOES AND HAM

Makes 7 servings

6 cups potatoes, peeled and sliced
1 medium onion, coarsely chopped
1 1/2 cups cubes cooked ham
1 cup shredded american cheese
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup milk
1/4 teaspoon thyme

In slow cooker, layer half each of the potatoes, onion, ham and cheese; repeat layers.

In small bowl, combine (undiluted) soup, milk and thyme; pour over top. Cover crock pot; cook on HIGH setting for 1 hour. Reduce to LOW setting; cook for 6 to 8 hours or until potatoes are tender.

BEEF-BARLEY SOUP

1 1/2 pounds beef stew meat, 1-inch cubes
1 tablespoon oil
1 cup thinly sliced carrots
1 cup sliced celery
1 medium onion, thinly sliced
1/2 cup coarsely chopped green bell pepper
1/4 cup snipped fresh parsley
4 cups beef broth
1 (16 ounce) can tomatoes, cut up
1 cup spaghetti sauce
2/3 cup pearl barley, uncooked
1 1/2 teaspoons dry crushed basil
1 teaspoon salt
1/4 teaspoon ground black pepper

In a large skillet brown meat, half at a time, in hot oil. Drain well.

Meanwhile in crockpot combine carrots, celery, onion, green pepper, and parsley. Add broth, undrained tomatoes, spaghetti sauce, barley, basil, salt, and pepper.

Stir in browned meat. Cover crock pot; cook on LOW setting for 10-12 hours or on HIGH setting for 4 1/2 to 5 hours. Skim off fat.

CROCKPOT CHICKEN AND NOODLES

"This is like a very thick chicken soup and the basil makes this delicious!"

2 stalks celery, cut up
2 carrots, cut up
1 large onion, sliced
1 whole chicken, cut up
2 teaspoons salt
1 teaspoon dried basil
1/2 teaspoon ground black pepper
3 cups water
4 cups uncooked noodles

Place the veggies on the bottom of the pot, put the chicken on top, followed by the seasonings. Pour 3 cups of water over.

Cover crock pot and cook on LOW for 8-10 hours.

Take chicken out (carefully, because it will come off the bones). Remove any bones that may be left in the broth in the crock pot. Put noodles in the broth, turning it up to HIGH. Let the noodles cook for 45 minutes while you take the meat off the bones. Mix the meat in.

CROCKPOT CHEESE AND MEATBALL SOUP

"My family loves this soup. It's a winter favorite."

FOR THE MEATBALLS:
1 pound ground beef
1/4 cup bread crumbs
1 large egg
1/2 teaspoon salt
1/2 teaspoon Tabasco sauce
FOR THE SOUP:
2 cups water
1 cup whole kernel corn
1 cup chopped potato
1 cup chopped celery
1/2 cup sliced carrot
1/2 cup chopped onion
2 cubes beef bouillon
1/2 teaspoon Tabasco pepper sauce
1 (16 oz) jar Cheez Whiz (added after cooking)
Crusty bread (for serving)

Mix ingredients for the meatballs together thoroughly. Shape into medium size meatballs.

Place uncooked meatballs and all other ingredients, except Cheez Whiz, in electric slow cooker. Stir gently.

Cover crock pot and cook on setting # 2 (LOW) for 8 to 10 hours.

Before serving add Cheez Whiz, stirring gently until well blended. Serve with a crusty bread.

CROCKPOT CHICKEN-LICKIN' GOOD PORK CHOPS

8 lean pork chops, 1-inch thick
1/2 cup flour
1 teaspoon salt (or to taste)
1/2 teaspoon garlic powder
2 tablespoons oil
1 (10 3/4 ounce) can condensed chicken and rice soup

Dredge pork chops in mixture of flour, salt, and garlic powder. Brown in oil in large skillet.

Place browned pork chops in crock pot. Add (undiluted) can of soup. Cover crock pot and cook on LOW for 6 to 8 hours.

CROCKPOT COLA STEAK

1 1/2 pounds boneless round steak
1 tablespoon flour
1 cup chopped onion
1/2 teaspoon salt
1/8 teaspoon garlic salt
1/8 teaspoon pepper
1/4 cup ketchup
1/2 cup carbonated cola drink

Trim meat, cut into 4 portions, dredge with flour. Put meat in crock pot, add other ingredients. Cover crock pot and cook 8-10 hours on LOW.

CROCKPOT COLA CHICKEN

1 cup regular cola (not diet)
1 cup catsup
1 onion, sliced
1 1/2 pounds chicken pieces

Wash and pat dry chicken. Salt and pepper to taste. Put chicken in crockpot and onions on top. Add cola and catsup. Cover crock pot and cook on LOW 6 to 8 hours.

When cooked place in refrigerator to cool and then skim off the fat. Reheat and eat.

CROCK POT LEMON CHICKEN

Carole Comments: "This is easy and tastes almost like the Lemon Chicken you get in a Chinese Restaurant."

1 chicken, cut up
1/2 cup flour
1 teaspoon salt
Oil (for browning chicken)
1 (6 ounce) can frozen lemonade concentrate
3 tablespoons brown sugar
3 tablespoons catsup
1 teaspoon vinegar
FOR THICKENING:
2 tablespoons cornstarch
1/4 cup water

Dredge the chicken in flour mixed with salt. Shake off excess and brown in a hot skillet. Remove chicken and put in the crockpot.

Mix the (undiluted) lemonade, brown sugar, catsup and vinegar (use regular vinegar if you prefer); pour over the chicken.

Cover crock pot and cook on HIGH for 3-4 hours.

When ready to serve, remove the chicken to a warm platter and thicken the sauce with the cornstarch/water solution, and serve along with the chicken.

CROCK POT PIZZA

1 1/2 lb hamburger (browned with chopped onion)
2/3 pkg cooked rigatoni
2 cans pizza sauce
2 bags shredded mozzarella cheese
1 pkg pepperoni sliced
sliced mushrooms (optional)

Layer ingredients in crock pot. Cover crock pot and cook LOW for 5 hours. Makes a full pot.

CROCKPOT STROGANOFF

1 1/2 lb ground beef
1 1/2 onions, sliced
1 cloves garlic, minced
2 tbsp flour
Salt and pepper (to taste)
1/4 tsp paprika
1 (10 3/4 oz) can condensed cream of celery or mushroom
FOR SERVING:
Sliced mushrooms (sauteed or canned, drained)
1 cup sour cream
Hot cooked noodles, rice or potatoes

Brown ground beef; drain fat. Add onions and garlic. Stir until wilted.

Add flour, salt, pepper and paprika, mixing well. Stir in undiluted soup; mix well. Put all in crock pot. Cover crock pot and cook on LOW for 6 hours.

When you get ready to serve add sliced mushrooms and sour cream. Serve over noodles rice or potatoes.
