The baked beans you're looking for seem to be one of those recipes that you can throw in a little of everything and it will still turn out good. I think it would hard to mess it up. Here are a couple that may give you inspiration. Add a teaspoon of liquid smoke if you like that flavor, and by all means, you could use a crockpot.
HAWAIIAN BAKED BEANS #1
1 1/2 c. drained crushed pineapple
sm. finely chopped onion
sm. green pepper, chopped
2 tbsp. brown sugar
1 lb. frankfurters, sliced
1 tbsp. catsup
1 tsp. prepared mustard
2 (16 oz.) cans pork and beans
Combine all ingredients in 2 quart dish and bake at 350 degrees for
1 hour. Serves 6.
