Recipe(tried): Next Best Thing to Tom Selleck Cookies (using After Eight Dinner Mints)

1 (12 oz.) pkg. chocolate chips*
1 1/2 cups brown sugar
3/4 cup margarine*
2 Tbsp. water
2 eggs
2 1/2 cups flour
1 1/4 tsp. baking soda
1 1/2 tsp. salt
2 boxes After Eight Dinner mints (thin mints)
Melt chocolate chips. Remove from heat. Mix in brown sugar, margarine, and water till smooth. Beat in eggs. Add dry ingredients. Refrigerate for at least one hour.
TO BAKE:
Preheat oven to 350 degrees F. Line cookie sheets with foil.
Roll into balls the size of a walnut and place on prepared cookie sheets.
Bake for 10 minutes at 350 degrees F.
While cookies are baking, unwrap mints.
Remove cookies from the oven. Place a mint on top of each cookie. Let melt and then spread. Make sure the top is "frosted," with the melted mint. Allow the cookies to set until the candy hardens.

NOTES:
We like these cookies alot. I have used both semi-sweet with good results or milk chocolate with 1 1/3 cups brown sugar, except they spread a lot and got really BIG but they still tasted fantastic! I substituted unsalted butter for the margarine and so my cookies spread a little more.
