BEANS WITH HOT SAUCE
2 cups dried pinto beans
1 cup cubed cheese
1/2 cup crumbled bacon
FOR THE HOT SAUCE:
1 onion, diced
1 green bell pepper, diced
1/3 cup diced celery
Green chiles (as desired)
1 cup drained shredded tomatoes
Soak beans overnight.
The next day, cook beans in water to cover on low until done. Drain, reserving approximately 1 cup liquid. Mash beans until almost smooth. Add cheese and bacon (beans must be hot enough to melt cheese). Keep warm.
Meanwhile, combine onion, bell pepper, celery, green chilies and tomatoes and refrigerate.
Serve hot beans with cold sauce. Excellent with cold fried chicken or ham as well as Mexican dishes.
