Recipe(tried): Helen Corbitt's Chicken Salad with Fruit

Helen Corbitt's Chicken Salad with Fruit

2 1/2 cups diced cold chicken (not canned!!)
1 cup chopped celery
1 cup sliced grapes (red are my favorite)*
1 cup sliced toasted almonds (not burned)
1 cup real mayonnaise
1/2 cup heavy cream, whipped
salt to taste

I would chill overnight. This is awesome for a tea with cucumber sandwiches and lemon squares. I consider it a stable. I have seen the grapes substituted with raisins, but grapes are best.

*Apple chunks occasionally fill the bill if grapes are out of season.
