Recipe: here you go, rotini nicoise

I haven't tried this but it sounds good(and it is light too).

Rotini Nicoise:

12 oz rotini
6 oz green beans, cut into pieces
1 3/4 c chopped tomatoes
3/4 c diced cucumber
3/4 c diced green or red pepper(or some of both)
1/2 c red onion, chopped
1 can flaked tuna, drained (the packed in water kind)
1/3 c sliced olives
1/2 c chopped fresh dill (or 1 tbsp dried)
5 anchovies, minced

Dressing:

1/3 c olive oil
1/4 c lemon juice
1/4 c balsamic vinegar
2 tbsp water
2 tbsp garlic, crushed

cucumber shavings to garnish

1. Cook pasta. Drain, rinse with cold water, drain and set aside in a serving bowl.

2. Blanch beans in boiling water, just until crisp, about 2 minutes. Drain, rinse with cold water and add to pasta. Add tomatoes, cucumbers, peppers, onions, tuna, olives, dill and anchovies.

3. Make dressing: In a small bowl combine oil, lemon juice, vinegar, water and garlic. Pour over the salad and toss. Garnish with cucumber shavings.

Makes 6-8 servings as a appetizer
