Recipe: Hi Barbara, this is my recipe for Mexican Rice

Misc.
Mexican rice, but I dont have any exact quantities because I modelled it from a dish I had in a Mexican Restaurant. I cook brown rice in home made chicken stock until absorbed (you will have to check quantities on packet of rice), then place in oven proof dish, top with hot chilli salsa then top with cheese, bake in hot oven until cheese is melted. Hope this helps.
