ISO: Need Chili Rice Recipe - involves baking

I have had the most marvelous, but simple rice dish served in a baking caserole with Cayenne? or some red sauce? and could NOT talk the cook out of revealing the recipe as he said it was so easy, that he had to make sure no body else had the recipe so that he could bring it to every potluck. It was tasty. Need it for a Halloween Potluck. Any other good mexican rice dish recipe would be appreciated. Thanks! Barbara
