Recipe(tried): Homemade Berry Cobbler and Ice Cream

Menus
We tried Gina's Chicken and Broccoli Casserole the other night along with a twist. Instead of peach cobbler we had Blackberry and Raspberry cobbler with homemade ice cream. These two go great together and if you are from the south you know what I mean. Here is my favorite cobbler and ice cream recipes.

Cobbler

Step 1:

1 TBSP lard or butter
3/4 cup sugar
1 cup sifted flour (if using self rising omit baking powder and salt)
3 tsp baking powder
1/4 tsp salt
1 cup Milk

Mix all together and let stand a minute.

Step 2:

1 1/2 cup Blackberries ( any berry will do or peach, if you like lots of fruit add more or less to your likin)
1 TBSP butter or margarine (melted)
1/2 cup sugar
3/4 water

Mix everything in step 2 together in seperate bowl.

Heat over 400*

Grease or butter a glass dish on bottom and sides, pour Step 1 mixture into dish first, then pour Step 2 mixture on top. Cook 30-40 minutes until top is brown. Dough will cook up and around berry mix. I use a round glass cobbler dish, anything will work.

Homemade Ice Cream (NO COOKING REQUIRED)

2 cups sugar
1 TBSP Vanilla
2 eggs
1 can evaporated milk 12oz
Milk

This makes 2 or 3 quarts, add more milk if making 3 quarts.

In bowl add sugar, vanilla, evaporated milk, and mix. Blend eggs seperate for about a minute. Add to milk mixture. Pour into ice cream mixer and fill the rest of the way with milk. Freeze as normal.
While the cobbler is cooking, the ice cream is making. As Martha Stewart says "Its a wonderful thing!" Enjoy
