Recipe: Boiled Arborio Rice with Smoked Salmon and Capers

BOILED ARBORIO RICE WITH SMOKED SALMON AND CAPERS

4 quarts water
1 1/2 cups uncooked Arborio rice
2 teaspoons salt, plus more to taste
3 ounces thinly sliced smoked salmon, cut into 1/4-inch cubes
2 tablespoons unsalted butter
2 tablespoons capers, rinsed and drained
1 tablespoon finely chopped fresh parsley leaves
Freshly ground black pepper to taste

Bring the water to a boil in a large saucepan. Add the rice and salt. Bring back to a boil and continue to boil, stirring occasionally, until the rice is tender, 15 to 17 minutes. Drain the rice in a colander and put it back in the hot pot.

Stir in the salmon, butter, capers and parsley, season with salt and pepper, and serve immediately.

Serves 4 as a simple dinner with salad
