Recipe: Homemade Sweet and Spicy Kielbasa (low salt, using pork shoulder and beef chuck)

1 teaspoon bourbon
Pinch dried red pepper flakes
1 pound pork shoulder
1/2 pound beef chuck
1 teaspoon freshly ground black pepper, divided use
1/2 teaspoon ground allspice
1 teaspoon garlic powder
1/8 teaspoon ground mustard
1 teaspoon brown sugar
Preheat indoor grill or bring a large, deep nonstick saute pan or grill pan to temperature over medium-high heat.
Put the bourbon in a microwave-safe bowl and add the pepper flakes; microwave on high for 15 seconds or until the mixture is hot.
In a large bowl, combine the seasoned bourbon with all the remaining ingredients except 1/4 teaspoon of the black pepper; mix well. Shape into 6 patties.
Place the patties on the grill, sprinkling the tops of the patties with the remaining pepper, and close the lid. Grill for 3 to 4 minutes or until the juices run clear.
Makes 6 servings
