Recipe: Horseradish Beef Salad

HORSERADISH BEEF SALAD

6 cups sliced boiled beef brisket
2 cups blanched celery, sliced
1 cup blanched onion, sliced
4 (4 1/2 oz.) jars sliced mushrooms, drained
FOR THE DRESSING:
1 cup mayonnaise
1 cup sour cream
1/2 cup prepared horseradish
2 tbsp. chopped pimiento
2 tbsp. Worcestershire sauce
2 tsp. sugar
2 tsp. salt
1 tsp. pepper
TO SERVE:
salad greens
sliced cucumber
cherry tomatoes

In large bowl combine beef, celery, onion and mushrooms.

Combine mayonnaise, sour cream, horseradish, pimiento, Worcestershire sauce, sugar, salt, and pepper. Blend well. Pour into beef mixture and toss well. Chill until serving time.

Mound on platter lined with salad greens and garnish with sliced cucumber and cherry tomatoes if desired.
