Recipe: Hot Bacon Dressing with Zinfandel

Dear Elaine,

I hope someone posts the fat free recipe you're looking for! Couldn't resist passing along this recipe while on the subject of Zinfandel.

Hot Bacon Dressing with Zinfandel

8 oz. bacon slices
Olive oil
1/2 cup red Zinfandel wine
1/4 cup Dijon mustard

Cook bacon until crisp. Drain. Pour pan drippings into measuring cup; add olive oil if necessary to measure 1/2 cup. Return drippings and oil to skillet and heat for 1 minute. Whisk wine and mustard in small bowl. Gradually whisk in 1/2 cup hot bacon drippings into the wine and mustard. Season to taste with pepper. Crumble bacon over salad, spoon warm dressing over and serve.
