Recipe: Hot Baked Potato Salad, Hot and Cheesy Potato Salad for Sue in Arizona
Salads - Potato, PastaHi Sue :-) Here are two recipes that I found on the internet. I have not tried either recipe.
Hot Baked Potato Salad
8 med. potatoes (cook in boiling water for about 20-25 minutes, cool, peel and cube)
8 oz. bacon, chopped and fried
1/2 cup chopped onion (or you could use chopped green onion)
1 to 1 1/2 cups mayonnaise, salad dressing, or sour cream (or you could try a combination of mayonnaise and sour cream)
1 small can sliced ripe olives (optional)
16oz American cheese, cubed or shredded (or you could use shredded cheddar cheese)
Combine mayo, onion and olives in large bowl. Salt and pepper to taste. Mix well. Fold in potatoes and cheese. Put into 3 quart rectangular baking dish. Sprinkle with bacon.
Bake uncovered at 350 degrees for about 30-40 minutes.
Hot and Cheesy Potato Salad
8 large potatoes, skins left on and cubed
3/4 lb Velveeta cheese
1/2 cup onions, diced
1 cup mayonnaise
1/2 lb diced bacon, partly cooked
1/2 cup stuffed olives, sliced
salt and pepper
Cook potatoes with there skins of just until fork tender but still firm.
Combine potatoes, onions, cheese, salt, pepper and mayonnaise. Put in a 9x13 inch baking dish top with bacon and olives.
Bake for 1 hour at 325 degrees.
