DELI POTATO SALAD
5 lbs red skinned potatoes, cut into thin slices
5 scallions thinly sliced (white and green)
1/4 cup fresh parsley
2 tablespoons chopped dill
1 1/4 cup mayonnaise
3 tablespoons rice vinegar
3 tablespoons fresh lemon juice
1 tablespoon salt
3/4 teaspoon pepper
Cook potatoes in salt water until done (do not over cook). Drain and cool slightly.
Add scallion, parsley and dill to potatoes.
Combine mayonnaise, vinegar, lemon juice, salt and pepper in a separate bowl. Pour over the potatoes and toss to coat.
Let sit in Refrigerator until cold
