TORTELLINI SALAD
18 oz cheese tortellini
4 oz gorgonzola cheese, divided
1/4 cup olive oil
1 tsp fresh lemon juice
1/2 medium red onion, chopped
1/2 red bell pepper, chopped
salt and pepper to taste
1/2 cup mayonnaise
1/4 cup sour cream
Cook tortellini to al dente and drain.
Crumble half of the cheese and add to warm pasta. Toss gently.
Combine oil, lemon juice, onion, and bell pepper. Mix well and add to pasta. Cool.
Mash remaining cheese and mix with mayonnaise and sour cream. Add to cooled pasta mixture. Refrigerate several hours before serving.
