Recipe: Hot Sauce
Misc. Hot Sauce
Makes 4 quarts
1 1/2 quarts seeded and chopped hot red peppers*
1 1/2 quarts peeled and sliced onions
2 quarts distilled vinegar or apple cider vinegar
Place the peppers, onions, and vinegar in a large pot and cook over medium heat till peppers and onions are soft, about 30 minutes. Remove the solids and puree them in a blender or food processor. Add the liquid and stir to blend thoroughly. Season with salt to taste and store in covered jars or bottles.
*Spiciness varies according to the amount of hot peppers, so if you like mild sauce use less.
