Recipe(tried): How to Roast Green Chiles

Kath in England, I use fresh long green chiles often. There are several ways to 'roast' them:

- Put them outside on a bbq grill, under a broiler, or in a skillet. Turn them often until they are blistered and blackened.

Remove to a paper bag up or a zip top bag and close or place in a bowl, tightly covered. Let them set 5-10 minutes. Then rub the charred skin off with a towel.

I've done all three ways and no problems. Actually a 4th way, we were camping, and I used my big cast iron pan over a wood fire. I love chiles.

This works well for New Mexico, Anaheim or any of the long green type. Probably for all chiles actually.
