Recipe: Round Top Cafe Chunky Chicken Salad Sandwiches
SandwichesROUND TOP CAFE CHUNKY CHICKEN SALAD SANDWICHES
"A basic chicken salad with chopped pecans, seedless grapes and chopped apple. Served on a Croissant."
3 cups chicken breast, poached and cubed
1 1/2 cups chopped celery
1/2 cup mayonnaise
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon white pepper
OPTIONAL:
1 apple, cored and chopped (Pink Lady, Granny Smith, etc.)
chopped pecans (as desired)
seedless grapes* (as desired)
TO SERVE:
6 croissants or homemade bread or serve on a bed of fresh greens
Poach chicken breasts in water with celery stalk, carrot, bay leaf, quartered onion, salt and fresh ground black pepper. Poach for about 20 minutes. Remove chicken and let cool. When cooled remove the skin and debone. Cut chicken into bite-size pieces.
Combine the chicken and celery in a bowl. Add the mayonnaise, lemon juice, salt & pepper, mix well. Chill for 2 hours before serving.
(Apples, pecans or grapes may be added when mixing the chicken salad. Use additional mayonnaise as needed.)
Serve on homemade bread or fresh croissants. Or simply serve on a bed of fresh greens with a slice of Roma- tomato
*If serving to children, cut grapes in half.
