INDIVIDUAL CHEESECAKES
"When you crave the one-of-a-kind rich, creamy taste and texture of cheesecake, but are short on time."

FOR THE GRAHAM CRACKER CRUST:
1 tablespoon butter
1/4 cup graham cracker crumbs
1 teaspoon sugar
FOR THE FILLING:
1 egg
1/3 cup light corn syrup
2 tablespoons sugar
1 tablespoon corn starch
1 tablespoon lemon juice
1 (8 ounces) package cream cheese, cut into cubes
Fresh fruit, preserves, pie filling or chocolate curls (for topping)
TO PREPARE THE GRAHAM CRACKER CRUST:
In small microwavable bowl, microwave 1 tablespoon butter on HIGH (100%) 30 to 40 seconds or until melted. Stir in 1/4 cup graham cracker crumbs and 1 teaspoon sugar until well mixed.
Press 1 tablespoon crust mixture into the bottoms of 4 (6-ounce) custard cups or ramekins.
TO PREARE THE FILLING:
Process egg, corn syrup, 2 tablespoons sugar, corn starch and lemon juice until combined in a food processor or blender. Gradually add cream cheese; process 1 minute or until completely smooth. Pour into prepared cups.
Microwave on MEDIUM (50%) 5 to 6 minutes or just until set. Cover and refrigerate 1 hour.
Top with fruit, preserves, pie filling or chocolate curls.
Makes 4 individual servings in 4 ramekins or custard cups
