Recipe(tried): Best Ever White Chocolate Cheesecake with Almond and Shortbread Crumb Crust

BEST EVER WHITE CHOCOLATE CHEESECAKE

This is the best white chocolate cheesecake I have found, creamy and delicious.

FOR THE CRUST:
1 1/4 cups shortbread crumbs
1/4 cup ground almonds
2 tablespoons sugar
1/8 teaspoon almond extract
3 tablespoons butter, melted

FOR THE FILLING:
6 oz white chocolate, chopped
3 packages (8 ounces each) cream cheese, softened
1 (8 ounce) package Light cream cheese, softened
5 large eggs, room temperature
3/4 cup sugar
3 tablespoons flour
1 teaspoon vanilla extract
1/4 teaspoon almond extract

TO MAKE THE CRUST:
Mix ingredients for the crust and press into the bottom of a springform pan.

Bake at 400 degrees F for 5-6 minutes. Remove from oven and cool. When the crust is cool, grease the sides of the pan lightly; set aside.

Reduce oven temperature to 325 degrees F.

TO PREPARE THE FILLING:
Melt and cool the chocolate. Set aside.

Mix the cream cheeses together. Add eggs, one at a time. Mix in 3/4 cup sugar, flour, vanilla, and almond extract. Stir 1 cup of the cream cheese mixture into the melted chocolate, then combine with the remaining cream cheese mixture. Pour into the crust.

Bake at 325 degrees F for 40 minutes. Set cheesecake in the pan on a rack to cool. Cool completely in refrigerator before serving.
