Recipe: Sweet and Sour Purple Cabbage (with apples)

SWEET AND SOUR PURPLE CABBAGE

1/2 cup chopped onion
1 teaspoon margarine
3 cups chopped purple cabbage
2 cups sliced apples, slices cut in half
1/4 cup water
2 tablespoons brown sugar
2 tablespoons vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon pepper
caraway seed (optional)

Saute onion in cooking spray and margarine for 1 minute.

Add cabbage and apples and saute for 3 minutes.

Add the remaining ingredients and stir well. Cover. Cook over low heat 20-25 minutes. Sprinkle with caraway seed if desired.

Servings: 6
