Recipe(tried): Italian (Sicilian) Hot Sausage
Misc.Sicilian Hot Sausage (ala Vincenzo)
25 Lb Ground Pork Butts
7 1/2 oz Salt
1 oz Red Crushed Pepper
1 1/2 oz Coarse Black Pepper
1/2 oz Red Paprika Powder
1 oz Sugar
1/2 oz Fennel Seed (Ground)
For Sweet Sausage: Same as above but omit the Red Pepper and the Red Paprika. You may half the recipe and add a slight amount of water or mild wine to adjust consistency. Mix ingredients well and put into casing. Also makes excellent patties.
