Soft Peach-Amaretto Ice Cream
1 (16 ounce) package solidly frozen unsweetened sliced peaches
1/3 cup superfine sugar
2 tablespoons solidly frozen orange juice concentrate
2 tablespoons Amaretto or 1 teaspoon almond extract
Pinch freshly grated nutmeg
Pinch salt
1 (12 ounce) can fat-free evaporated milk, refrigerator cold
Place all ingredients except the milk in a heavy-duty food processor fitted with the metal chopping blade and churn 1 1/2 minutes nonstop. Scrape down the work bowl sides.
With the motor running, drizzle the evaporated milk down the feed tube and continue churning until the mixture is soft and fluffy, 1 1/2 to 2 minutes more.
Spoon at once into dessert goblets and serve.
