ITALIAN TURKEY LOAF
1 large egg
1 (14 1/2 oz) can diced tomatoes with dried herbs, undrained, divided use
1/2 cup finely chopped onion
1/2 cup quick-cooking oats
1/3 cup grated parmesan cheese
1/3 cup chopped parsley
1 teaspoon black pepper
1/2 teaspoon salt
12 ounces Italian turkey sausage, removed from casings
8 ounces ground turkey
1/3 cup spaghetti sauce
Heat oven to 375 degrees F. Line a rimmed baking sheet with nonstick foil.
Beat egg in large bowl; stir in half the tomatoes, onion, oats, cheese, parsley, pepper and salt. Mix in sausage and ground turkey until blended. Place on lined pan and pat into a 9x4 1/2-inch loaf.
Bake 45 minutes or until a meat thermometer inserted in the center registers 160 degrees F.
Remove from oven, brush loaf with spaghetti sauce and bake 10 minutes more or until sauce looks set and the internal temperature registers 165 degrees F. Let stand 10 minutes before slicing.
Meanwhile heat remaining canned tomatoes and serve with meat loaf.
