[i dunno why but my family puts cinnamon in the riccota and if i don't it doesn't taste like lasagna to me.]
SPINACH THREE CHEESE LASAGNE
INGREDIENTS
4 sheets no-boil lasagne
1 10oz package frozen or 1 lb fresh spinach
1 small boiling size onion
1 tsp minced garlic
1 tbs oil
8 oz of pasta sauce
1 cup ricotta cheese
1/2 cup shredded mozzarella
1/4 cup grated parmesan cheese
1 egg
[dash cinnamon]
1-2 slices of mozzarella or 1/4 cup shredded mozzarella
cooking spray
TOOLS
skillet
loaf pan, 8x4 seems better than 9x5
foil
PREP
mince onion
DIRECTIONS
saute onion & garlic in oil 1 minute.
add frozen drained spinach saute until most of the moisture is abosrbed.
if using fresh, just saute until wilted.
blend the egg with the ricotta, mozzarella & parmesan and add cinnamon.
spray the loaf pan with cooking spray
pour a few tablespoons of sauce on the bottom of the pan.
layer 1 piece of lasagne, 1/3rd the spinach mixture, then 1/3rd the cheese mixture.
another piece of lasagna then spinach & cheese. a 3rd layer then spinach & cheese
top with last slice of lasagna, pasta sauce and mozzarella.
bake covered with foil for 45 minutes.
remove cover last 5 minutes to brown.
let stand 8-9 minutes before serving.
great reheated.
