STELLA'S STUFFED GIANT SHELLS
1 lb ground beef chuck
1 large onion, chopped
1 garlic clove, chopped
18 large pasta shells
8 oz mozzarella cheese, shredded
1/2 cup Italian-seasoned bread crumbs
1/4 cup chopped fresh parsley
1 egg
Salt and ground black pepper (to taste)
2 cans (16 oz each) spaghetti sauce, divided use
1/3 cup dry red wine
1/2 cup grated Parmesan cheese (plus additional for serving, if desired)
Brown chuck, onion and garlic in a skillet until chuck is crumbly; drain off excess fat and set aside to cool.
Meanwhile, cook shells in boiling salted water until tender, about 15 minutes; drain.
Spoon one-quarter of the sauce over the bottom of a greased 13x9x2-inch baking pan
Stir mozzarella cheese, crumbs, parsley and egg into the cooled meat mixture; season to taste with salt and pepper. Stuff shells with meat mixture. Place shells in sauce in the baking pan, side by side in a single layer.
Mix wine with remaining sauce; pour over shells. Sprinkle with cheese.
Bake in preheated 400 degree F oven 20 to 25 minutes, or until brown and bubbly. Sprinkle with additional Parmesan cheese if desired.
Makes 6 servings, 3 shells each
