Recipe: Kataifi Rolls and Shredded Wheat Cake a.k.a. Kataife for Jean in Utah

Desserts - Assorted
Hi Jean:-) Here are two recipes for you to try if you like. I have not tried either one. The first one does sound authentic but finding the Kadaifi pastry could be a challange. I have to say, that the second recipe - the one made with shredded wheat sounds rather interesting but I wonder how it would be? If you decide to try it, let us know how it turns out.

KATAIFI ROLLS
Source: Carroll Pellegrinelli

1/2 pound chopped almonds or walnuts
1/2 cup toasted bread crumbs
1/2 cup sugar
1/2 cup orange juice
1 pound Kadaifi pastry
1 1/4 cups butter, melted
FOR THE SYRUP:
3 cups sugar
2 cups water
1/2 cup honey
2 Tbsp. lemon juice
cinnamon

Preheat oven to 350 degrees F. Grease baking pan.

Mix nuts, crumbs, sugar and orange juice. Divide the long threads of kadaifi pastry into 16 to 18 portions. On the end of each portion, place 1 heaping tablespoon of nut mixture. Roll up loosely. Place rolls side by side in pan, but not too closely.

Pour melted butter over rolls and bake for 45 minutes. Remove rolls from oven.

While rolls are resting for 20 minutes, combine syrup ingredients in saucepan. Boil for 5 minutes.

Pour syrup over rolls. Cover with dish towel. Allow syrup to absorb for 5 or 6 hours. Sprinkle with cinnamon.
