Recipe(tried): Killer Corn Pudding

Side Dishes - Vegetables

From the Calico Cactus Cookbook (Scottsdale, Arizona Girl's Club Auxiliary)

This is sooooooo good!

1 16 oz. can creamed corn
2 T. melted butter
1 T. sugar
2 T. yellow cornmeal
1/2 c. buttermilk
1 c. grated cheese (calls for cheddar, jack is also good)
1 t. soda
1/2 t. salt
3 eggs, NOT beaten
1 4 oz. can chopped green chilies

Stir to blend all ingredients, except for half of cheese. Pour into 9" sqaure or 1 1/2 qt. casserole. Sprinkle remaining cheese on top. Bake 30-35 minutes. Cool slightly. Serves 6.

(Warning: For some reason this recipe doesn't double well. I learned the hard way.)
